Database benchmarks are set up to look impressive, not to reflect what the database will do under your actual workload with safe defaults. The safer defaults tend to be slower. So they don't get used in benchmarks. And nobody turns them on in production because they don't know they need to. And the world mostly keeps spinning. Until it doesn't.
